#13, Make Popovers
Have you ever been to the Neiman Marcus cafe and delighted in their popovers and strawberry butter? They are delicious. I was having a bit of a craving and I decided to make some myself. They could have puffed a bit more, but since we are focusing on happiness and not on perfection, they were just fine.
I think you should look for a more reliable recipe than the one I used. This one from the Barefoot Contessa looks great.
I have popover pans, but any muffin pans will do. Just make sure they’re hot before you pour in the batter.
I enjoy the strawberry butter at Neiman Marcus, but I wanted to add some brightness to the overall flavor. Often strawberry jams and butters have a one-note sweetness, that I don’t find interesting. I decided to make a strawberry-lemon butter and it knocked my socks off. I think it would also be delicious on Belgian waffles.
It was very easy. Here’s the recipe I put together. I used a Meyer lemon.
8 ounces european-style butter, softened (I used Plugra)
1 cup strawberries, hulled and quartered
1 teaspoon lemon zest
1 tablespoon lemon juice
1/3 cup sugar
Put all these ingredients into the food processor. If your butter is too cold, the mixture will not blend well. Pulse until smooth and combined. If the mixture is a bit too wet, because your strawberries are especially juicy, you can add a bit more sugar.
Try not to eat it with a spoon, though you may be tempted.
One last thing… I love this word (below) and today’s blog post made me think of it.
